I see it like this. If, for example, I write banana bread, I do not do it for the sake of anglicizing a name that could perfectly be 'banana cake', but because the concept exists and is understood.
When I write banana bread, ordinary mortals will understand what I mean. If, on the other hand, I say 'banana cake', it lends itself to thousands of different interpretations of the appearance, flavor and texture that that preparation may end up having.
I think it's clearer if I explain it with an omelette (which isn't English, but it still comes from another language). The omelette is a specific concept, with very clear parameters.
