Caviaroli wins the Agri-Food Technological Innovation Award 'PITA 2022'

Caviaroli, the Catalan family business based in Esparreguera, has been awarded the 'PITA 2022' Agri-Food Technological Innovation Award in the Agribusiness category. The award, convened by the Department of Climate Action, Food and Rural Agenda of the Generalitat de Catalunya, aims to promote innovation in agricultural and agro-industry companies, and in young entrepreneurs.

The award ceremony took place this Wednesday, April 26, in the framework of the Rusiñol Colony, in Manlleu (Barcelona). The event included the presence of the Hble. Mrs. Teresa Jordà, Minister of Climate Action, Food and Rural Agenda of the Generalitat de Catalunya, Lluc Crusellas, best master chocolate maker in the world 2022 and Karma Peiró, journalist specialized in Information and Communication Technologies, among others.

Caviaroli has been awarded for its innovative and self-manufactured technology to encapsulate and spherify extra virgin olive oil and olive juice for haute cuisine. The company designs and manufactures all of its machinery, which has resulted in the creation of four patents and a utility model that has spread throughout the world.

The contest, which this year has celebrated its XXI edition, has presented a total of 20 innovative initiatives valued by a jury chaired by the General Director of Agri-Food Companies, Quality and Gastronomy, Joan Gòdia, and made up of representatives of the Autonomous University of Barcelona (UAB), the University of Lleida (UdL), the Institute for Research and Agrifood Technology (IRTA) and the Department itself.

Caviaroli's history dates back to the 1990s, when the company's founder, Ramón Peñalver, began experimenting with the spherification of food. Spherification is a culinary technique that involves the encapsulation of liquid foods within a solid sphere, using alginate and calcium chloride. Peñalver realized that this technique could be applied to olive oil, and thus oil caviar was born, one of the company's most emblematic products.

Caviaroli oil caviar has become a key ingredient in many fine dining restaurants, and has allowed the company to expand throughout the world. However, the company has not stopped there: it has recently presented its latest creation at Salón Gourmets 2023, Caviaroli Fruit (Lemon, Mango and Raspberry), which consists of fruit pearls designed both for consumption in homes and restaurants. . In addition, Caviaroli has launched a line of liquid olive sauces, made from the juice of green olives.

The 'PITA 2022' award is a recognition of so many years of effort and dedication by the company.
