You can find avocados all year round, since different varieties are sold, but they all coincide in the pear shape of the fruit, the thick, hard rind, and the green color (more or less intense depending on the variety), as well as the creamy pulp. Remember to buy something green if you are not going to prepare the recipe the same day, as it matures quickly.
> 4 pear tomatoes
> 2 avocados
> 1 bunch of fresh cilantro

1. First, cut the tomatoes in half lengthwise and then into thin wedges. Chop the bunch of fresh cilantro.
2. Peel the avocados and also cut them into very thin segments. Season with a pinch of salt and pepper, the chopped cilantro (reserve 1 tablespoon), a couple or three tablespoons of extra virgin olive oil and a few drops of lemon juice.
3. Arrange the avocado wedges in a circle and the chopped plum tomatoes around them on the plates.
4. Sprinkle on top with the reserved coriander, a pinch of ground cumin and season with a little more extra virgin olive oil and a tablespoon of lemon juice.
