If you buy very green avocados, there are some tricks to speed up their ripening process at home. But the most convenient thing is to buy them directly at the optimal point of ripeness, so you can enjoy them as soon as you get home. Therefore, it is best to know how to distinguish the perfect avocados when you go to buy them. David Guibert, chef at the restaurant Le Comidare (San Sebastián), shares on his profile on the social network Instagram – where he has 214 thousand followers – his secrets to getting the right thing when buying avocados. By following these guidelines, you will find those that are ripe and ready to eat.

“I have been preparing guacamole at Le Comidare for more than three years and after having made more than 1,000 kilos, I have found what for me are the three keys to choosing the perfect avocado,” emphasizes the chef. First of all, he recommends looking at the color of the avocado's skin, which must have a dark tone like the one seen in the video.

Next, you have to remove the stem that connects the fruit to the tree and look at the color inside. It must be yellowish green. If it is too dark, it indicates that the avocado is rotten, while if the color is very yellow the avocado will still be green.

Finally, touch will give you the final clue. But you don't have to randomly feel any point on the avocado, but rather its upper end, around where the stem was located. “Apply my advice and never buy rotten avocados again,” says the chef in the text that accompanies his video.
