Some chefs try to bring order to their kitchens, even if it means imposing fines for lateness or sanctions for poor clothing or lack of personal hygiene. In the case of a Spanish restaurant with a Michelin star, an economic punishment has been chosen if the rules are not met.

In a document published by the Twitter account @soycamarero, the restaurant establishes some rules regarding tips and the punctuality of its workers.

As for tips, they start to be charged "everyone equally" and a "points scale" is no longer applied. "This is going to imply a greater involvement on the part of these people, taking into account that, when they are asked to stay for some reason, their answer is always affirmative," says the company in its letter, to the anger of many users.

In addition, this restaurant with a Michelin star announces a system of sanctions "that until now have been allowed to pass" and related to "the punctuality, clothing and personal hygiene" of the workers.

In the case of punctuality, a scale with economic fines is set, in case of non-compliance: if you arrive 5 minutes late, you will have to pay 10 euros; if the delay is 10 minutes, 20 euros; and if it is more than 15 minutes, the penalty will be 50 euros.

The company justifies all these changes because "they are looking for excellence" and they have to respond to the Michelin star category they hold. And he argues that it is "the best way to end the tardiness of being late for work." Otherwise, he continues, "it creates a detriment to colleagues who are on time."

However, the measure has been widely criticized on social media. Many say that it violates the hotel agreement and even the Workers' Statute. Others wonder if the company will pay them when they leave work 15 minutes late.

Finally, they have decided "that the person who does not show up to work without providing any medical leave, does not collect the tip and that day of vacation is discounted."
