Paella can be made in many ways, but always respecting a few minimums. The Valencians are the most vigilant with this typical dish of our country, pending that sacrilege is not committed. However, Paco, a man from Alicante who has settled in Colombia for 17 years, has broken all the schemes of what is understood by Valencian paella.

"It has pork, chicken, octopus, squid, paprika, tomato, beans. It's like a fried food. Later, we also add shellfish: mussels, clams, shrimp, squid rings...", explains this man, who runs a restaurant in Colombia where he promises his clients a true Valencian paella, the "authentic" one.

Paco's secret and "the touch" so that his dish fits him ten is "the salmorreta", as he explains in a video collected by the TikTok account Los Insaciables. In addition, before some of his clients, he makes a curious comparison: "Paella is like a pizza, you eat it from one part."

TikTok users do not believe what they are seeing, especially those from Alicante. "Being from Alicante, I can confirm that in my life I have never seen a paella like this in Alicante", comments one of them. "What a pain to be from Alicante and see this... What a pain," adds another.

You don't have to be Valencian to know that this recipe is not typical of the community. "Nobody in Spain would think of making such a horrible mixture in a paella," continues another. "In my life anywhere in Spain, I'm not telling you in Alicante, I've seen a paella like that," another person added in a new comment.
