A school in Ronda (Málaga) that works with vulnerable students and those in situations of social exclusion, El Golimbreo, has included classes in ancient trades in its training program, including goat herding and master's courses in cheese making. .

The purpose of expanding training to these sectors is to promote the learning of lifelong professions that are at risk of being lost but that are "necessary for the useful life of any town", as highlighted by the center in a statement.

In addition, these traditional jobs offer "job opportunities" and contribute to promoting the development of a circular economy in the region, they have specified from El Golimbreo, which was born as an inclusive cooking school in 2017 and now expands its classes to other areas. such as cheese making.

Over time, the center has expanded its program and has specialized in the comprehensive training of students in the gastro-tourism sector, so that its offer includes courses, in addition to cooking, organic farming, biodynamics, bakery or confectionery.

Always under the prism of inclusiveness, the young people who come to El Golimbreo can also train in professions linked to tourism and in high demand such as floor waiters, room and reception staff to integrate into the labor market.

The school, now transformed into a foundation, will move to the eco-farm where the Cueva del Gato Ecological Hotel is located, so that its students can work "in contact with the earth, in the open air", has stressed its founder, the cook Miguel Herrera. In it "there is the perfect symbiosis for them to acquire not only cooking techniques and traditional recipes, but also the origin of the product", concluded Herrera.
