Rebujito, cuttlefish, marinated dogfish, squid and pijotas, but also wines, specifically from Andalusia. These days the fairs, the celebration and flamenco return; and to celebrate it even at home we want to offer you a selection of some of the wine jewels of this Community, among which the generous ones stand out, although there are many more.

In this curious wine made with grapes from Pago Miraflores La Baja, aging under a veil and without fortification is valued. The wine has only remained veiled for a few weeks in steel tanks after a short period of biological aging in sherry casks. In aromas it is very intense and loaded with nuances that reveal its origin, being fresh on the palate, very broad and with a long finish.

The winery is located in the historic center of Jerez de la Frontera and this fino is made from a selection of casks from the La Panesa farms. It is a generous wine with the power of the good work of the fifth generation of a family with a great tradition. It is sharp and very intense on the nose with hints of nuts, olives, marine notes and dried flowers. In the mouth it is immense, dry and with a finish between saline and salty.

The vineyard of this rosé wine originating in the Sierra in Antequera, is worked in a sustainable and ecological way. It is pale pink in color with salmon trim. In aromas it displays floral notes such as orange blossom, stone fruit and strawberries. In the mouth it is very refreshing in its journey, juicy and with herbal touches in its finish.

Gutierrez Colosía is a winery with a long history in these parts, which was built in the Palace of the Count of Cumbrehermosa. Its wines are very complex and, in the case of the oloroso, absolutely aromatic. It has notes of nuts, dried apricots, toast, fine wood and sweet spices. In the mouth it is very dry, sharp, broad and with a long finish with many nuances.

With the conditions offered by an altitude of 1000 meters and worked organically, we find a very fresh, delicate expression of Tempranillo with fine tannins. In aromas, it shows the variety with red and black fruit, aromatic herbs, chocolates and spices. Its mouth has a certain volume due to the contribution of 12 months of aging in French barrels and its finish leaves a sensation of cocoa and pleasant minerality.

Red wine made in the Sierra Norte de Sevilla, a city in full festival at this time. It has been aged for 9 months in a Flextank tank. Intense purple in color. Fragrant on the nose with dominance of flowers such as lavender, undergrowth and red and black berries, highlighting the currant. The palate is wide with a good balance between body and freshness.

Wonderful sweet liqueur wine with an average age of more than 30 years using the criaderas y soleras system in American oak, which translates into patience, history and complexity. It is made in the heart of Axarquía and offers a wide range of aromatic nuances such as raisins, varnishes, dried flowers, chamomile and fine wood. Dates and fruit stand out in the mouth, with a soft sweetness.
