The dessert of the Mercè festivities is back

The Mercè dessert is already in pastry shops. Like last year, the Gremi de Pastisseria de Barcelona has promoted among Barcelona establishments the preparation of a fig, almond and honey cake, with a sablé dough base, which wants to become an icon of the city's festivities.

This proposal, which will be sold in a hundred pastry shops inside and outside Barcelona, ​​was created in 2022 by the chef and National Gastronomy Award winner, Jordi Vilà, and the pastry chef Antonio Bachour after noticing that the city did not have a sweet to celebrate its Major Festival.

It is no coincidence that these two friends chose figs as one of the main ingredients in the recipe. This time of year, lady's coll figs are in season, and they couldn't waste the opportunity.

After the success of 2022, the Gremi de Pastisseria de Barcelona trusts that the purchase of this Mediterranean and seasonal cake will end up becoming a tradition during La Mercè. On this website you can consult the stores where it will be sold.

But this will not be the only sweet proposal that Barcelona residents will be able to buy during the holidays. Apart from the previous initiative, pastry chefs Pol and Christian Escribà, Oriol Balaguer and Eric Ortuño have come together to create another Mercè cake, inspired by the human towers of Barcelona.

The conical-shaped sweet is made with an inner cone of 70% chocolate and three types of lyonises: white chocolate cream, caramel chocolate and 70% dark chocolate cream. A box has also been designed for this cake, of which a limited edition will be made, and which can be purchased in the L'Atelier, Oriol Balaguer and Escribà stores.
