Michelin Guide Spain 2024: the restaurants awarded the Green Star

"In today's world, sustainability is not a whim, it is not a luxury, it is a true necessity," declared the Michelin Guide four years ago, at which time it decided to start awarding green stars to restaurants committed to the environment. . At a gala held tonight at the Auditori Fòrum of the Barcelona International Convention Center (CCIB) and in which they have premiered in the highest category of the list Enjoy (Barcelona) and Noor (Córdoba), these have also been awarded distinctions that reward sustainability and that are independent of the classic brilliance.

Last year, 13 Spanish restaurants achieved this leaf-shaped seal that evokes nature and, with this, the number of establishments with this recognition rose to 39. This time, the Michelin Guide Spain 2024 has also awarded numerous chefs and cooks, specifically, to a total of 12. Thus, since the guide launched the green stars, there are 61 establishments that have earned the distinction.

The large number of green star winners demonstrates "the growing awareness of creating sustainable cuisine," said Elisabeth Bouche-Anselin, International Director of Communication at the Michelin Guide.

The guide wanted to highlight the importance of companies seeking a balance between the development of people, financial results and the environment. "You have to be socially responsible with the world and, for this, sustainability is vital," said Mari Paz Robina, president of Michelin Spain and Portugal.

The majority of new green stars have gone to the Balearic Islands, where four restaurants have been distinguished for their good sustainability practices: Andreu Genestra, Béns d'Avall and Ca Na Toneta, in Mallorca, and Es Tragón, in Ibiza. And Catalunya follows, with two establishments: Emporium, in Girona, and L’Algadir del Delta, in Tarragona.
