A classic Catalan recipe to feel at home. This preparation developed by the Alícia Foundation aims to preserve the gastronomic culture of Catalonia by linking the primary sector of the area.
Alicia's team is working on several projects within the framework of the development of the Strategic Food Plan of Catalonia (PEAC), one of them dedicated to the promotion of little-known or valued agri-food products. On this occasion, the aim is to revalue the less valued cuts for their texture as they are drier and sinewier.
In the recipe we find parts such as the round, the shank or the flat, cooked slowly to obtain more tender textures and in a perfect format to enjoy a tasty stew full of nutrients. This preparation also incorporates a large number of vegetables such as mushrooms and potatoes, which thus make up an ideal dish for these last days of winter.
