Sara Fort, National Gastronomy Award for Best Room Management

Sara Fort, from Paco Roncero Restaurante, in Madrid, has been awarded the National Gastronomy Award for Best Room Management, the Royal Academy of Gastronomy (RAG) has announced.

Sara Fort, National Gastronomy Award for Best Room Management

Sara Fort, from Paco Roncero Restaurante, in Madrid, has been awarded the National Gastronomy Award for Best Room Management, the Royal Academy of Gastronomy (RAG) has announced.

Sara Fort, who has been managing the restaurant for 25 years, founded La Broche in 1997 with Sergi Arola, and later Sergi Arola Restaurante.

In these establishments "he broke the mold by betting on a close, friendly and dynamic room service, a modern and elegant style that, working from excellence, moved away from the 'rigidity' of the time," says the RAG statement. Since 2019 he has led the Paco Roncero Restaurant room, where he is in charge of a team of nine people.

The president of the jury, the National Gastronomy Prize winner Juan Manuel del Rey, highlighted that Sara Fort "is an institution in the living room of our country, an example to follow and a pioneer for the innovation she launched. Her career is very important and this award recognizes their professionalism and the quality of their work.

The 2023 National Gastronomy Awards presentation gala will be held on October 3 at the Reina Sofía National Art Center Museum.

Along with Del Rey, the jury has been integrated by Lourdes Plana Bellido and José María Sanz-Magallón, president and secretary general of the RAG, National Award winners Cristina Prados, Mónica Fernández and Carmelo Pérez, and Academics Luis Suárez de Lezo and Borja Beneyto.
