Dropping an information bomb serves to warm up engines, and this time the news is the withdrawal of the third star from two restaurants: Guy Savoy, the spectacular establishment located in the La Monnaie palace (National House of the Mint and Stamp of France), Facing the Seine, which has held this distinction since 2002 and is run by one of the country's great chefs, veteran Guy Savoy. The other is La Rochelle, by Christopher Coutanceau, which had achieved the guide's highest recognition in 2020.
Gwendal Poullennec, director of Michelin, told Agence France-Press that "these are two exceptional restaurants and that is why this measure is the result of mature reflection."
