This dessert, which has evolved since Jordi Roca first made it in 2004, is part of the tasting menu currently served at Celler de Can Roca. In the Roca brothers' artisan ice cream parlor, Rocambolesc, they also offer a delicious version: it consists of baked apple ice cream, with caramelized Golden apple, cooked apple and pieces of butter cookie.

The video published by the chef and pastry chef from Girona accumulates two million views, but it is not the only content that has managed to go viral. Jordi Roca publishes all kinds of recipes on his profile, which has managed to capture the attention of thousands of users. Some of the latest have been his 'Interpretation of strawberries with cream' or 'The pink macadamia nut'.

His 'Piscina de bolas', an elaboration for which he also uses the blown sugar technique, is another of those that has achieved the most popularity. In this case, the candy sphere is filled with small balls of fruit pulp, pineapple, coconut, cherry, passion fruit, mandarin, apricot, cherry, blackberry, raspberry, lychee, and baked apple.
