The best Parisian brunch in Madrid

The Frenchman Joël Robuchon became the chef with the most Michelin stars in history, exactly 32 in 2016. A gastronomy artist who revolutionized French haute cuisine and whose legacy arrived in Madrid, in the form of a restaurant, in 2022. As it could not be otherwise, it is called Robuchon, and it is synonymous with exquisiteness and Parisian savoir faire. In a corner of the stately Paseo de la Castellana, lovers of French and Spanish cuisine can enjoy a very varied gastronomic offer at any time of the day in three different spaces.

L'Atelier, on the first floor, is dominated by a large bar where small portions allow you to try a little of everything, which opens to the living room with large windows and views of the Castellana, where iconic dishes from the French chef are combined. with Jorge González's own proposals. Among its delicacies are shaved foie gras on potato salad with black truffle or Sologne Imperial caviar on crispy poached free-range egg, smoked salmon

In another environment, L'Ambassade is an informal bistro where you can snack at any time, from breakfast to afternoon and dinner. It consists of an open kitchen to see the magic behind each dish, and at the entrance there is a bar area, with high tables and stools, perfect for tapas. It also has an informal but sophisticated Tea Lounge and La Terrasse, a huge terrace right on the promenade. From cod fritters with light ali oli to corvina tartar cornet and other tapas available.

Finally, Le Speakeasy, in the basement, is a secret corner with red velvet fabrics and stone tables where Mario Villalón cocktails are served.

The latest proposal is Le Brunch Robuchon to enjoy on the weekends. Between 10 a.m. and 1 p.m., it combines sweet recipes – croissant, pain au chocolat, raisin bread and swiss – with savory proposals – avocado toast and marinated salmon or eggs benedict with salmon or bacon –, fruit and dairy products, as well as coffee, orange juice and cocktails.
