How did you become a diet entrepreneur?

Because the keto diet changed my life, starting with my own body, and having been a professional in the chemical and food industry for ten years, I tried to share my success with my own keto company.

Did you eat poorly before?

I had always been overweight and tried various diets that always made me lose a few pounds and then put back even more than before, and I had been obese for thirty years now and believed it was my fault.

Why did you feel guilty?

Because I suffered from bulimia and then anorexic episodes; vomiting, binge...

Did you hate the fridge?

Or I would let myself be dominated by it: sometimes I would faint from fasting and then I would eat the entire fridge until little by little, reading about dietetics and consulting specialists, I began to realize that it was not my fault, but rather that of what I was eating. and how and when.

Why wasn't his body responding?

The answer lay in studying our evolution as a species.

Is the keto diet similar to the paleo diet?

With some caveats...

Do we have to eat like Cro-Magnons?

A mammoth had protein, fat, entrails... But no chocolate biscuits, crispbread or tasty cereals and sugar, lots of sugar... Which is exactly what we have for breakfast and snack every day today.

Isn't that the energy we need?

To spend eight hours in front of the computer and five more looking at the mobile? Let's accept that we barely move and that, at most, we take 5,000 steps a day.

Why did you eat more than necessary?

Due to unhealthy habits generated and generating uncontrolled anxiety... Because I ate too much!

How did you beat them?

By modifying my diet to make laketo, I changed the energy substrate of my body and then, instead of basing my diet on glucose and sugars, I began to use and expend fat: my own fat.

Isn't keto just another dissociated diet?

The ketogenic or keto diet reduces the amount of carbohydrates, sugars, potatoes, rice, and we favor foods rich in healthy fats... And vegetables, salads, cauliflower and, above all, proteins.

What else do they do without?

Of all cereals and legumes.

Well, they are pillars of the Mediterranean diet.

But good, green vegetables are better than legumes.

For example...

Broccoli, spinach, cauliflower, lettuce, carrot, bell peppers; and not so much fruit, but a lot of red fruits, strawberries, blackberries, lemons and meat, fish, eggs...

What do they have in common?

That our body is like a hybrid car: you can use gasoline or the battery, and glucose is easy energy, which gives you an immediate kick...On the other hand, those foods don't give us that kind of kick.

Are they healthy food for evolutionary reasons?

Because evolutionary, what we have evolved for, is to use fats as a primary source of energy. But the food industry wants to sell more and more, and the sooner the better; and has discovered that sugar makes us addicted to its products.

Does the keto diet prescribe eating more fat to lose weight?

This is what I discovered after trying other diets with a yoyo effect, which left me with more weight than at the beginning. On keto I ate fat, yes; but lost even more.

Vegetable fat, I guess.

Olive oil, of course, avocado... But also ham: let's not demonize saturated fats, because we need them in their proper measure, like everything else.

I go to the market: what do I buy?

Feed yourself with what suits you, not the industry. Buy those fresh foods that I told you about, but I once again insist on fresh foods as well as avoiding processed, ultra-processed, sugar and additives.

How is keto day?

Mine starts with intermittent fasting, but it's nice, because you only feel like eating twice a day, since it's very satisfying. Today is 1 pm and I still haven't eaten. I'll make myself a breakfast with baked chicken with vegetables and a Greek yogurt for dessert with all its good fat. Nothing light.

Why not light?

They are ultra-processed. Then at 5 pm a green tea until 7 pm when I'll have grilled salmon or scrambled eggs with prawns or asparagus and strawberries for dessert.

Did you create your company from your diet?

Working in the food industry I saw all the additives they put in food and I said to myself: “No: that's not for me”. And now I sell olive oil and alternative breads, cakes, pizzas...
