Dom Perignon brings together great chefs in Venice

Vincent Chaperon, the chef de cave at Dom Perignon, has once again brought together renowned chefs this week at the presentation of the firm's latest novelty, the Rosé Vintage 2009, which they were able to taste in an old Venetian palace, where a new edition of the meetings Las Révélations de Dom Perignon, designed to bring the sensibility of haute cuisine closer to the world of champagne.

Dom Perignon brings together great chefs in Venice

Vincent Chaperon, the chef de cave at Dom Perignon, has once again brought together renowned chefs this week at the presentation of the firm's latest novelty, the Rosé Vintage 2009, which they were able to taste in an old Venetian palace, where a new edition of the meetings Las Révélations de Dom Perignon, designed to bring the sensibility of haute cuisine closer to the world of champagne.

The presentation, which featured Albert Adrià, Paco Pérez, Fernando Pérez Arellano, Paco Morales and Quique Dacosta, among dozens of chefs from other countries, concluded with a tasting menu inspired by the new rosé and created by the Italian Massimilano Alajmo, from the triestrellado Le Calandre (Padua), and that for a season he will offer in his restaurant.

Chaperon highlighted the contrast of the 2009 vintage with the grape obtained the previous year. "Faced with the marked acidity of the 2008, which was fresh and with a friendly light, the 2009 is the opposite, heat and light that provide a very marked aromatic maturity in a wine that caresses and embraces you." These characteristics were reflected in very floral dishes with which the Italian chef wanted to express youth and vitality based on notes of flowers and fruit.

From Dom Perignon, in a torrid Venice for the month of June, Chaperon recognized that there is great concern about the rapidity of climate change, and explained that the location of Champagne, punished for decades by extreme weather of rain and cold, still allows you to make great wines.
