As is already known, thorns or lentils are foods with large amounts of iron. However, to obtain more properties, a very useful option is to mix them with lemon.

Being a rich source of vitamin C, this fruit plays a relevant role in the absorption of iron in our body. Thus, adding a splash of lemon juice to our summer salads can be a very beneficial trick.

Normally, the iron present in lentils or spinach is only assimilated by only 40%, while after adding lemon juice its bioavailability can increase up to 67%.
