In food there is a long way to go and if not tell the winners of ftalks'22, the food innovation event that has been held these days in Valencia.

Promoted by the KM ZERO Food Innovation Hub, this edition has awarded the Bilbao startup Isauki in the Sustainability category for the development of plant-based fish and shellfish, and the Barcelona-based Let's Cook, which designs cooking kits with new recipes and fresh products from proximity, recognized in the Innovation category.

The startups have been selected by a jury made up of the project manager at Lanzadera, Tony Paños; the general partner at Cardumen Capital, Catalina Girald; and the Tech Transfer Agrifood director, Pedro de Álava. Both have received a trophy designed by Lowpoly, made by 3D printing, using materials made of compostable plastics, mixed with organic material such as orange peel.

The awards were announced on Friday, on the last day of an event that, in addition to food, has discussed the metaverse, impact investment or food design. The director of KM ZERO, Beatriz Jacoste, compares this fourth edition of the event with a trip to the future of food: “It has been a laboratory where you can experiment with all your senses. Attendees have been able to have multisensory experiences and see, smell, touch, try and taste endless foods developed with the talent of entrepreneurs that we will see on the shelves in the coming years. A place to meet the people with whom to create a future of food with global impact”.

At the meeting, the so-called Future Market has hosted for the first time the neuroscience station of the Italian company Thimus, where an interactive experience has been created. Through an encephalogram it has been possible to see the brain response of the participants when consuming certain foods.

Gethello smart fridges have also been present; Gloop's edible cutlery; vegan gummies with vitamins, hyaluronic acid, biotin and melatonin from Be-Tamins; the signature "Ready To Drink Cocktails" for the delivery of Bold-Drinks; a new generation of products based on fructose-free fruits obtained thanks to its own technology that maintains the nutritional value of fruits created by Freeshakes; and Petalinas flower petal snacks.

ftalks'22, which has brought together more than 100 international speakers, including 40 startups who have debated the latest market trends and current challenges in the sector between the Palau de les Arts Reina Sofía and El Telar de Miguel Martí, gave the international jump in the month of September with an edition held in Mexico.
