Eneko Atxa and Dom Pérignon create an exclusive menu paired with champagne in Azurmendi

Chef Eneko Atxa, from the three-star Azurmendi, in Larrabetzu, and Dom Pérignon have teamed up to create an exclusive menu that pays tribute to the origin, history and heritage of the Champagne House. The thirty dishes that will make up the experience, which will be paired with different champagnes, will be served in different rooms of the restaurant, some of which have been designed exclusively for this project.

This is the case of "The most beautiful garden in the world", a space designed by interior designer María Villalón that is based on the philosophy of Eneko Atxa and the character of Dom Pérignon Rosé "in the process of creating an exploration area to be explored slowly. ", they explain from the prestigious Maison. It is located in the traditional Atxa greenhouse, which is now "an area of contrasts and natural materials" where a sequence of four appetizers associated with the plant world will be served, which will be paired with the Dom Pérignon Rosé Vintage 2009.

This space dressed in wood was born from Eneko Atxa's desire to offer a "singular and poetic experience in a garden", and is inspired by the aromas, connotations and tones of this sparkling wine. It is a glazed and integrated garden "to dedicate time and a lot of calm to the tasting", which is decorated with dried flowers created with recycled materials.

After the "Welcome Picnic", "the Truffle Table" and "the Garden", the menu continues at "the Dom Pérignon Table", which is located in the Azurmendi dining room. Here dishes are served on a monumental stone table that seats a maximum of 12 people, and is a tribute to the history and heritage of Dom Pérignon. The menu offers two pairing experiences: “The Dom Pérignon Essence” (850 euros per person) or “The Plénitudes of Dom Pérignon” (1,000 euros), which includes unique bottles.

"The famous Maison and the renowned chef share tradition and avant-garde and have brought together processes and methodology in a co-creation of respect based on their essence and character," they conclude from Dom Pérignon.
